Recipe: Breakfast Greek Burrito

Where I got this recipe: myself! I like trying something different and I wanted to experiment. I see it as a breakfast because it is egg-based.

The recipe in a few words: very Greek, original, fantastic

My advice: Try not to be saucy – use just a little bit but not too much.

My recommendation: I recommend for breakfast. You can use regular or flavored feta like Mediterranean flavor seasoning.

Ingredients:

  • olive oil or olive oil spray
  • 2-3 eggs
  • fresh spinach
  • chopped garlic
  • feta cheese
  • almond flour tortillas
  • lite Greek vinaigrette
  • salt and pepper to taste

Recipe:

  1. Put the spinach and chopped garlic in a frying pan with some olive oil spray to cook together. Add feta cheese.
  2. Beat the eggs in a small bowl. Add salt and pepper to taste.
  3. Put olive oil spray in a separate pan. Then add the eggs and scramble.
  4. Lay out two almond flour tortillas on a plate with a little overlap.
  5. Add the cooked eggs, spinach, chopped garlic, and feta on top of the tortillas. Drizzle some of the lite Greek vinaigrette on top.
  6. Roll up everything in the tortillas. Drizzle some more lite Greek vinaigrette on top.
  7. Enjoy!
