What I liked about this recipe: What I like about this recipe is that it’s new and it’s different, and it’s shortbread-based. It’s also mom’s favorite!

What I would change about this recipe: I would never change a thing, but I am thinking of adding in pumpkin spice covered apples in the middle next time.

My recommendation: I recommend this bar for holiday occasions because it’s good to celebrate Thanksgiving or Christmas or whatever you like to celebrate!

Ingredients for shortbread:

  • 2 1/2 cups flour
  • 1 tsp cinnamon
  • 1 cup soft butter
  • 1/2 cup brown sugar
  • 1/4 cup powder sugar
  • 1 egg
  • 2 tsp vanilla

Ingredients for brown sugar filling:

  • 1/2 cup brown sugar
  • 2 tbsp melted butter
  • 2 tbsp all purpose flour
  • 1 tbsp cinnamon

Ingredients for icing:

  • 1 cup powder sugar
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 2 tbsp milk

Recipe:

  1. Preheat oven to 350 degrees.
  2. In a big bowl, combine the butter, brown sugar, and powder sugar. Once creamed together, add in your egg and vanilla and mix again. Add in your flour and cinnamon and mix until a dough forms.
  3. Split your dough in half. Add 1/2 to a lined 8×8 baking dish and press the dough until it is flat. Take the other 1/2 of the dough and press it into an 8×8 square on a piece of parchment paper on the side.
  4. For the filling, mix all of the ingredients in a small bowl. Add on top of the dough in the baking dish and then place the other half of your dough on top.
  5. Bake in the oven for about 40 minutes.
  6. Make your icing by combining the ingredients in a bowl and drizzle on top when the shortbread is cooled.
  7. Enjoy!
Happy birthday to our mom! Shortbread is her favorite cookie so this was perfect for a cake to celebrate.
