Recipe: Chicken Rotini with Collard Greens and Tomato Sauce

Where I discovered it: I made it at Hearts for the Homeless in downtown Buffalo.

Cooking Partners: My mom and Chef Stacy

What I liked about this recipe: It is very flavorful. It’s definitely healthy because of the vegetables and the chicken.

Thoughts for next time: Next time I would more seasoning like all Italian seasoning or herbs. I would try cheese on top next time.

Ingredients:

  • collared greens, fresh or from a can
  • diced tomato
  • tomato sauce
  • rotini pasta
  • basil
  • cooked chicken

Recipe:

  1. I cooked the pasta.
  2. I mixed everything together in a big tray.
  3. I baked it all together in the tray at 350 degrees for about 40 minutes or until hot all the way through.
  4. Enjoy!
